Chops & Greens

With Greek Yogurt

SERVES 1 // PREP TIME 10 mins // COOK 10 mins // TOTAL  20 mins

Ingredients:

  • 3 lamb chops 
  • 1 cos lettuce 
  • 1 table spoon of greek yogurt
  • Half a small cucumber chopped
  • 2 cloves of garlic
  • Parmesan cheese
  • Small bunch of fresh mint
  • Small bunch of fresh dill
  • 1 lemon
  • Oregano
  • Salt
  • Pepper

    Steps:

    1. Start BBQ up and get it ready or you can just do this recipe in a fry pan (not as cool sorry! ha!
    2. To make the lamb marinade, get a small bowl and add a teaspoon of oregano, glove of garlic finely chopped or micro planed, 2 table spoons of extra virgin olive oil and a squirt of lemon and mix together. Place lamb chops on a plate and add salt and pepper and then poor half the marinade over the chops.
    3. Wash your cos lettuce and cut in half - long ways. Place in bowl and lightly drizzle some olive oil over it. Now for the yogurt sauce - in another bowl add greek yogurt, cucumber, a squirt of lemon, dill, mint and mix well. Place in the fridge to keep cool.
    4. Place chops on BBQ, marinated side down and brush on marinade to the other side. Now add lettuce to the BBQ. Depending on how thick your chops are will determine how long until you turn them over. You should flip your lettuce first because it will cook a lot quicker. Cook lettuce through and plate. Grate a little parmesan cheese over the lettuce. Plate lamb chops add your yogurt sauce and you're done!
