Grapefruit Salad

Grapefruit Salad

with avocado, fennel and honey-lemon vinaigrette

SERVES 2 // PREP TIME 10mins // COOK 5mins // TOTAL 15mins

Ingredients:
  • 2 large grapefruit, pith and rind removed and cut into segments
  • 1 whole large avocado with skin off and cut lengthwise into 8 pieces
  • 1 cup thinly shaved fennel using a mandolin or sharp knife. 
  • 1/2 cup of goat or sheeps milk feta
  • 4-6 fresh mint leaves
  • 1/2 cup roasted walnuts (optional)

Honey vinaigrette:

  • 1Tb honey
  • 2tsp dijon mustard
  • 1Tb lemon juice
  • Salt and pepper to taste
  • 1Tb olive oil plus a drizzle
  • 1 fresh orange

Steps:

  1. Place the grapefruit slices on plate and sprinkle with some good sea salt and a drizzle of olive oil.

  2. Add the slices of avocado, feta and fennel over the top. Mix all of the ingredients with the vinaigrette until smooth and drizzle over the salad evenly.

  3. With a fine grater, grate a bit of the peel over the salad for extra flavour and freshness. Rip some fresh leaves of mint over to enjoy. 

Perfect salad for sustained energy since it has citrus, good fats and fresh fennel bulb which contains potassium, vitamin B-6 and vitamin C which help with heart health. Perfect addition to any protein or just add some almonds or walnuts for extra nutrients if not eating meat.
