Honey Mustard Chicken

Honey Mustard Chicken

SERVES 2 // PREP TIME 10 mins // COOK 10 mins // TOTAL  20 mins

Ingredients:

  • 400 grams of chicken breast cut into thin slices
  • 1 green capsicum sliced
  • 1 1/2 cups of red cabbage sliced
  • 1 cup of chopped mushrooms
  • 1 orange
  • 2 tbl hemp seeds or any seeds you like
  • 1 tbl olive oil for cooking veg 
Chicken Marinade
  • 2 tbl honey
  • 2 tbl dijon mustard
  • 1/2 tbl paprika
  • 1/2 tbl sea salt
  • 1/2 tbl pepper
  • 1tbl apple cider vinegar
  • 1/2 tbl garlic
  • 2 tbl olive oil

    Steps:

    1. In a medium size mixing bowl throw in all ingredients for marinade and whisk together until you get a smooth consistency. Place chicken breasts in bowl and cove completely. The longer you can marinade this the better it will taste. I literally did mine for 5 minutes while i chopped up all my vegetables.
    2. Heat up a large fry pan on high heat and add green capsicum, red cabbage and mushrooms - sauté for 6-8 minutes depending on how thick you cut your vegetables. Turn off heat squirt orange through the mix.
    3. Heat up another large fry pan and add your chicken. Cook time should be quick, 4-6 minutes because the chicken should be cut into thin pieces
    4. Plate your vegetables and chicken, finish it with some hemp seeds and ya done!
