Prawn Salad

SERVES 1 // PREP TIME 5mins // COOK 5mins // TOTAL 10mins

Ingredients:

  • 200g of pre cooked prawns tails removed
  • 1 Hand full of rocket
  • 1 Handful of baby spinach
  • 1 Handful hopped romain lettuce
  • 1/2 Avocado chopped
  • 6 cherry tomatoes chopped
  • 6 snow peas chopped
  • Tbsp Dijon mustard
  • 1/2 lemon
  • Olive oil
  • Sea salt
  • Nutty mix mine had; walnuts, shaved almonds, coconut shavings, cranberries

Steps:

  1. Wash all mix greens and dry before placing them into a salad bowl. Add tomatoes, snow peas, nutty mix and prawns. Add sea salt.
  2. In a small bowl or container add 1 Tbsp Dijon mustard, 30 ml of olive oil and squeeze in half a lemon. Mix well.
  3. Poor salad dressing into salad bowl and toss salad till dressing completely mixed through salad
  4. Plate salad and add chopped Avocado on top and your done!
