Smokey Chicken

With Truffled Mash

SERVES 1 // PREP TIME 10 mins // COOK 10 mins // TOTAL  20 mins

Ingredients:

  • 1/4 of a head of cauliflower
  • Small bunch of broccolinni
  • 200g chicken breast or small chicken breast 
  • 3 tbl olive oil 
  • 2 tbl truffle oil 
  • Pistachio nut
  • Lemon wedge

Decent pinch of the following for the smokey flavour:

  • Sea salt
  • Turmeric
  • Pepper
  • Garlic powder
  • Smoked paprika 
  • Cumin

    Steps:

    1. Add cauliflower to boiling water and cook for 10 minutes. While the cauliflower is cooking, grab a bowl and add your spices; olive oil, sea salt, turmeric, pepper, cumin, garlic powder, smoked paprika, cumin and whisk together. Add your chicken breast and toss.
    2. Once cauliflower is cooked strain it and add to a blender with salt, pepper and truffle oil. Blend until it’s a smooth consistency. 
    3. Heat up a pan on high, add broccolini and chicken breast and cook chicken through.
    4. Plate cauliflower mash and broccolini on top with chicken to the side. Microplane a pistachio nut over the broccolini and squeeze on some lemon and ya done!
