Poached Egg and Spinach

Poached Egg and Spinach
With soft polenta

SERVES 1 // PREP TIME 8mins // COOK 12mins // TOTAL 20mins

Ingredients:
  • 1/4 cup dried polenta
  • 1cup water
  • 1/4 cup grated parmesan
  • 2Tb chopped green onion
  • 1Tb organic butter
  • 1-2 eggs
  • 1Tb white vinegar
  • 1cup fresh spinach washed and dried

Steps:

  1. Place the water in a small pot along with polenta and slowly bring a boil. Once boiling, place heat on low/med and cook slowly for 8min. Should be creamy and not gritty. Add the the butter, parmesan, green onion, salt and pepper to taste. Mix well.
  2. Meanwhile in another pot, bring water to a medium boil and add a tablespoon of white vinegar. Crack eggs in water and guide them with a spoon to make sure they stay whole and round. Cook for about 2-3 mins depending on desired consistency.
  3. Place the warm polenta in a bowl and place the poached eggs on top.
  4. In small flat pan set on high heat, add washed spinach and move around quickly to wilt. Add some salt, pepper and a squeeze of lemon. Place on top of the eggs and porridge and grate some extra parmesan if you desire!
Note: polenta is a great way to substitute porridge in the morning and tastes absolutely amazing
