Steak Night

MONDAY STEAK NIGHT

With chimichurri dressing

SERVES 1 // PREP TIME 10 mins // COOK 10 mins // TOTAL  20 mins

Ingredients:

  • 200g filet steak
  • ½ a romaine lettuce
  • ½ avocado cut into quarters 
  • tbl grated Parmesan cheese

Chimichurri Sauce:

  • 1 cup of chopped parsley
  • ½ cup of chopped coriander
  • ¼ cup of chopped oregano
  • 1 garlic glove crushed or microplane
  • ½ cup of extra virgin olive oil
  • 1 ½ tbl of red wine vinegar
  • Pinch chili flakes
  • Salt and pepper
  • Lemon wedge

Steps:

    1. Turn BBQ on high heat.
    2. To make the chimichurri sauce; combine the parsley, coriander, oregano, garlic, olive oil, vinegar, lemon and chilli flakes into a small bowl and mix with a fork. Season with salt and pepper
    3. Oil, salt and pepper your steak and put onto the BBQ. After 2 minutes oil the cut side of your romaine lettuce and put on the BBQ as well.  Depending on how like your steak cooked, turn over after 3-5 minutes and then add the avocados.
    4. Turn avocados once they have grill marks. Plate steak and add chimichurri sauce. Plate romaine lettuce, grate parmesan over the top and then add avocados and you're done! Enjoy.
