Steak & Sweet Potato Wedges

Ingredients:

  • Fillet steak
  • 1 small sweet potato 
  • 3 broccolini stalks 
  • Wedge of lemon
  • Olive oil
  • Sea salt
  • Pepper
  • Paprika
  • Garlic powder
  • Mixed herbs

      Steps:


      Preheat oven to 200C/400F and turn on BBQ to high.

      Wash your sweet potato before cutting it into wedges. You don’t want your cuts too thick or they will take too long to cook. Place in mixing bowl, drizzle oil over wedged, add paprika, salt, pepper, garlic powder, mixed herbs and toss until they are covered in oil and seasoning. Lay wedges down on a non stick baking tray or on some baking paper and place into the oven for 10-15 minutes before turning over and cooking for the same amount of time.

      Lightly coat broccolini in oil. Oil and salt both sides of the steak. Throw broccolini and steak onto BBQ and spray broccolini with water. Depending on how thick your steak is flip it after 3-5 minutes. Flip broccolini once it has that charred look and cook the same on the other side

      Once steak is cooked take off BBQ and place on a plate and cover with aluminium foil and let it rest. Take broccolini off when cooked and place back into mixing bowl add lemon and salt and toss.

      Take wedges out of the oven and plate with steak and broccolini. Finish with a little salt and lemon and you're done!
