Turkey Meatballs

Turkey Meatballs

with shiitake mushrooms and spinach

SERVES 2-4 // PREP TIME 15mins // COOK 20mins // TOTAL 35mins

Ingredients:
  • 2lbs Ground turkey
  • 1Tb soy sauce
  • 1 cup of cooked white rice
  • 3Tb green onion sliced
  • 2 garlic cloves finely chopped
  • 2tsp grated ginger
  • 1/2 cup thin sliced shiitake
  • 1cup fresh spinach leaves washed and dried
  • 2Tb olive oil
  • 1Tb red wine vinegar
  • 1Tb of light agave
  • 2tsp salt
  • Fresh ground pepper
  • 3 cups of chicken stalk
  • 1/2 cup sliced white onion

Steps:

  1. Mix the first 13 ingredients well and form into balls.

  2. Fry in batches in a deep skillet until evenly golden brown and soft. Remove from the skillet and set aside.

  3. Add the onion and shiitake and cook on medium until tender and golden without burning. Add the stock and bring to a boil. Scrape off any of the bottom bits from the meats balls to add flavour to the broth.

  4. Check for seasoning and add salt and pepper if needed.

  5. Add the meatballs back into the broth and simmer for 15mins.

  6. Add the spinach on the last minute and mix well.

Enjoy in a nice warm bowl with some spice of your choice if you like.
