Veggie Omelette

With Pesto & Rocket

SERVES 1 // PREP TIME 10mins // COOK 5mins // TOTAL 15mins

Ingredients:

  • 3 free range eggs
  • 1 hand full of wild rocket
  • Small handful of chopped pumpkin cubes
  • Small handful of chopped zucchini
  • 1/4 cup of chopped red pepper
  • 1/4 cup of chopped red onion
  • 1/3 cup of a hand full of cheesy goat
  • Teaspoon of pesto
  • Teaspoon of coconut oil
  • Sea salt

Steps:

  1. Heat up a pan to high and add a tea spoon of coconut oil. Once hot, add red onion, pumpkin, zucchini, red peppers and cook vegetables to you your liking.
  2. Crack 3 eggs into a bowl and whisk. Poor into pan and evenly spread. Turn down the heat to low and put a lid on pan. Once cooked to your liking fold eggs over to corner of pan and form your omelette.
  3. Plate your omelette, add a teaspoon of pesto on top. Add a little sea salt and chuck some rocket on the side.
  4. And you're done! :)
